Orzo Pasta Salad with Lemon Basil Vinaigrette

• 16 oz of orzo, cooked premeditatedly
• 1 1/2 Cups of cherry tomatoes, halved
• 1/4 Red onion, if it’s possible, then finely diced it
• 1 Small Cucumber
• 4 Oz (1 small container) of crumbled feta cheese
• 1/2 Cup of sliced almonds
• 8-10 Basil leaves, finely chopped (+more for garnish)
• Juice of 1 lemon
• 1/2 Cup of extra virgin olive oil
• 2 Teaspoons of pepper
• 2 Teaspoons of kosher salt

Cooking Instructions (Though I’m not a good cooker, lol)

Cook the orzo as directed on the box. After draining, rinse the orzo thoroughly with cool water until it’s cool to the touch. After drying off the pasta grains, place them in a big basin. Mix the olive oil, lemon juice, salt, pepper, and basil leaves in a small bowl with gentle whisking. Evenly pour over the orzo and mix with remaining ingredients. Blend thoroughly.

Try some with the pasta to determine whether it needs extra lemon, salt, or pepper, or if you just like it that way! Tightly seal and store in the fridge until you’re ready to serve. Toss the salad one last time right before serving to mix up any ingredients that may have settled to the bottom. Garnish with fresh lemon slices and basil leaves.
